Bran
Refrigerator Muffins
| 2/3 cup whole bran cereal
1/3 cup oat bran 2/3 cup boiling water ½ cup skim milk 2 egg whites, beaten 2 T. cooking oil 1 cup all-purpose flour ¼ cup packed brown sugar 1½ t. baking powder 1 t. cinnamon ¼ t. salt Stir together bran cereal and oat bran
in boiling water. Stir in milk, egg whites and oil. In another bowl stir
together flour, brown sugar, baking powder, cinnamon and salt; add to cereal
mixture until just moistened. Can be stored in a covered container in the
refrigerator for up to 1 week. Spray muffin cups with nonstick cooking
spray. Fill muffin cups 2/3 full and bake at 400ºF for 20 minutes
or until a toothpick inserted comes out clean. Remove from pans.
