Black-Eyed
Peas
| 1Tbsp. olive oil
1½ cups onion, chopped 1½ cups chopped celery 3 - 16 oz. cans black-eyed peas 1 - 16 oz. can chopped tomatoes ¼ to ½ cup real bacon bits 1 clove garlic minced salt and pepper to taste Sauté onion and celery until tender,
about 5 minutes. Combine with black-eyed peas, tomatoes, bacon bits, garlic,
salt and pepper in baking dish. Bake for 30 minutes at 325º F.
