Bottom Pie
| 3 egg whites
¼ teaspoon salt ¼ teaspoon cream of tartar 1 cup sifted sugar 1 teaspoon vinegar 1 teaspoon water 1 teaspoon vanilla ¼ cup cocoa Ice cream Combine egg whites, salt and cream of tartar,
and beat to a stiff foam. Add sugar in ½ tablespoon portions alternately
with combined liquids, adding a few drops at a time until used. Add cocoa
in 1 tablespoon portions, using sifter and beating until blended. Cut a
piece of heavy brown paper to fit a 9-inch pie pan. Spread meringue in
pan which has been lined with paper and bake in slow oven (250° F.)
for 1 hour. Remove paper and cool. Fill shell with ice cream, top with
bitter chocolate shavings and serve with fudge sauce.
