Black Beans
| 4 slices bacon, diced
1 medium onion, diced ½ t garlic, minced 2 – 14.5 oz. cans black beans 1½ cups beef broth 1 t cumin 2 t dark rum 2 t parsley, chopped salt and pepper to taste Brown the bacon in a skillet. Add the onion
and garlic. Cook until soft. Toss together with the remaining ingredients.
Pre-heat the oven to 350. Place the mixture in a casserole dish. Cover
and bake for 1½ hours. Serve warm. Serves 4-6
