Bearnaise
Sauce
| 1 recipe hollandaise sauce | |
| 2 T tarragon vinegar
2 T dry white wine |
1/3 c. peeled chopped shallots
1 T finely chopped tarragon |
| Heat in small saucepan until all but about 1 T liquid has evaporated. Stir into hollandaise along with 1 T finely chopped fresh tarragon. |
