Buckwheat
Griddle Cakes
| 2 cups scalded milk
½ teaspoon yeast (¼ package) ¼ cup lukewarm water ½ teaspoon salt 2 cups buckwheat flour 1 tablespoon molasses ¾ teaspoon soda 2 tablespoons lukewarm water Dissolve yeast in ¼ cup lukewarm
water. When milk has cooled to lukewarm, add yeast mixture. Add buckwheat
flour and salt. Beat thoroughly, cover and let rise overnight. In the morning
add remaining ingredients. Beat and drop by spoonfuls on a hot greased
griddle. Cook until golden on both sides.
