Barbecued
Chicken
| 1 - 2½ to 3½ pounds chicken
1 teaspoon salt ¼ teaspoon garlic ½ teaspoon pepper 1 tablespoon' paprika 1 tablespoon sugar 1 medium onion finely chopped 1 cup catsup ¼ cup butter ½ cup chicken broth 1/3 cup lemon juice or vinegar 1 tablespoon cup Worcestershire sauce Prepare the barbecue sacue by blending seasonings and sugar, then adding onion, catsup, butter and broth. Heat to boiling. Remove from fire and add lemon juice and Worcestershire sauce. For use in basting chicken during cooking, blend 1/3 cup the same amount of chicken broth. Set aside the remaining sauce for serving with chicken. Place cut-up chicken in skillet baste well
with diluted sauce. Cover tightly and bake in moderate oven, 350
degrees, for about 1 hour. Baste once or twice. Remove cover,
baste and continue cooking uncovered until tender and browned, about 1
hour. (Total cooking time, about 2 hours.) Serve hot with undiluted barbecue.
