Baked Beans
| 2 cups dried beans
6 cups tomato juice 3 teaspoons salt ¼ pound salt pork (or bacon) 1/3 cup unsulphured molasses 1 teaspoon chili powder 1 teaspoon dry mustard ¼ teaspoon black pepper 1 tablespoon Worcestershire sauce 1 medium onion, chopped Wash beans, soak overnight in 5 cups tomato
juice. Add salt. Cover. Simmer over low heat until beans are tender. Pour
beans in pot or casserole to bake. Wash and score pork in half inch strips;
press into top of beans. Add remaining ingredients to the remaining cup
of tomato juice; over beans. Cover. Bake in moderate oven (350° F.)
2 hours. Uncover. Lift pork to top of beans and bake until pork is brown.
