Apple Sage Stuffing
 
2 teaspoon butter
1 roll sausage crumbled up fine
2 large onions chopped
4 stalks celery diced
4 ounces mushrooms chopped fine
1 granny smith apple not chopped fine
3 loaves standard size bread
½ cup chicken stock
2 teaspoons parsley
1 teaspoon sage
2 teaspoons rosemary crushed up
1 teaspoon thyme

Let bread stand out for a day. Melt butter and fry sausage. Add onions and celery and stir cooking for 5 minutes. Add apple and mushrooms and cook 5 minutes more. Wet bread under running water and squeeze out well. Crumble into pot. Stir well when all bread is added. Add stock and seasonings. Continue to cook stirring until desired texture. 

Variations: Substitute one of the following for apple: ½ cup apple sauce, 1 cup cranberries, 2-4 tablespoons orange marmalade, 1 cup boiled chestnuts chopped, 1 cup chopped fresh oysters.
