Layer Dinner
| 1 medium onion, chopped
1 T shortening or oil 1 to 1½ lb. ground meat 2 tsp. salt 1/8 tsp. chili powder 1 c. cooked potatoes 1 T chopped parsley 1 c. string beans, cooked (fresh or canned) 1 whole kernel corn, cooked 4 medium sized tomatoes, sliced or; 1 can tomatoes, drained 2 T grated cheddar cheese Cook meat and onions in fat until meat
changes, color. Add one tsp. salt, stir well. Add pepper and chili powder;
stir well. Place in a greased 1½ quart casserole. Place potatoes
over meat. Add a layer of string beans and a layer of corn. Sprinkle each
layer with a little salt. Top with tomatoes. Sprinkle with remaining salt.
Sake at 350º for 20 to 25 minutes. Just before done, sprinkle top
with grated cheese and parsley. Return to oven to melt the cheese. Serves
4 to 6.
