14-Carrot
Cake
| 2 c. flour
2 tsp. baking powder 1 1/2 tsp. soda 1 tsp. salt 2 tsp. cinnamon 2 c. sugar 1 1/2 c. vegetable oil |
4 eggs, beaten
2 tsp. vanilla 2 c. grated carrots 1 - 14 oz. can crusthed pineapple 1/2 c. chopped nuts 1/2c. raisins |
| Beat eggs, oil, sugar and vanilla. Add carrots, nuts and fruits. Mix well. Sift together the first 5 ingredients, and add to liquid mixture. Pour into greased and floured pan(s) - either one 9 x 13-inch pan or three 9-inch round pans. Bake for 35 to 40 minutes at 350o. |
